Mexican pop up

On June 28th and 29th, a special pop-up event took place at Hotel Warszawa (Szóstka restaurant), featuring guest chef Thalía Barrios García. The initiative, organized by the Embassy of Mexico in Poland as part of its cultural diplomacy efforts, offered participants an immersive experience of the most authentic and refined flavors of Mexican cuisine through a specially curated tasting menu.

Thalía Barrios García is one of the most promising figures in contemporary Mexican cuisine. Born in San Mateo Yucutindoó in the Sierra Sur region of Oaxaca, she was surrounded from an early age by women who passed down the secrets of traditional cooking. Her grandmother was a well-known local expert in moles and baking, while her mother cooked at home every day. These roots inspired Thalía to pursue a culinary career. In 2019, she opened her first restaurant, Levadura de Olla, which quickly gained recognition for its authenticity and respect for local traditions. In 2024, she was awarded a prestigious Michelin star and named Mexico’s Young Chef of the Year. In her cooking, Thalía blends tradition with modernity, using seasonal ingredients and local products. Her dishes are a tribute to her native culinary heritage—full of flavor, color, and history.
